91ÖÆÆ¬³§ the Chef

Robert Calcagno, DDS, is a native of Rochester with family ties to Valguarnera Caropepe, Sicily. Although he has taken classes at the Institute of Culinary Arts, he has learned primarily from cooking with his mother as a child and by teaching himself through family recipes.

Pane cunzatu

Three types of risotto

Chicken thighs in a sundried tomato cream sauce

Chocolate chip hazelnut torta

A note from Dr. Calcagno:

We will begin with a glass of wine and pane cunzatu. Participants will then make three types of risotto; butternut squash risotto, spring vegetable risotto, and Parmesan risotto. Our main course is chicken thighs in sundried tomato cream sauce. We finish with chocolate chip hazelnut torta.

Limoncello Ricotta Torta

Description from Dr. Calcagno:

We will start with the traditional Sicilian pizza, sfincione.

Participants will make two types of pasta, pappardelle and cavatelli. The pappardelle will be served with Boscaiola, a traditional Tuscan cream sauce with pork and mushrooms. The cavatelli will be served with a simple garlic, and rappi, and olive oil sauce.

Our salad is insalata all' Abruzzese consists of zucchini, green beans, tomatoes, sweet peppers, onion, oregano, and bassil. It is lightly dressed with oil and vinegar.

ÌýDessert is limoncello ricotta torta.

  • Tuesday, March 24th, 6PM: Coffee themed!

A note from Dr. Calcagno: Participants will be making °Õ¾±°ù²¹³¾¾±²õù. Coffee and espresso will be provided by local coffee roasters, TIA Coffee.

ÌýA note from Dr. Calcagno:ÌýFor the hands-on portion of our April 14 cooking class I will share my recipes for meatballs and braciole cooked in my grandmother's sauce.Ìý Learn how to stuff, roll, tie and cook beef braciole; and season and shape meatballs.Ìý We will then enjoy our crostini appetizer, ziti, braciole, and meatballs, followed by salad and rum cake.

Policies

Registration procedures and policies: Registration links will be provided at least two weeks before each cooking class. You may register online or call our office phone for assistance.ÌýNo one may register after 5pm the Friday before the cooking class.

Refund policy: If you cancel more than one week before the cooking class, you will receive a full refund. No refund will be provided to those who cancel the Wednesday prior to the event or later.

Membership benefits: If your Casa Italiana membership includes one or more cooking classes, make sure you emailÌýcasa@naz.edu at least two weeks before the class to register and indicate your membership year.ÌýGuests accompanying members are not eligible for the member rate.ÌýPriority for registration is given to members.
